Can a small, red cottage in Austin, Texas change how a nation eats sushi? If you ask anyone who has dined at Uchi, the answer is a resounding yes. Founded in 2003 by Chef Tyson Cole, Uchi has grown from a local gem into a national culinary powerhouse.
The word uchi translates to “home” in Japanese. This name fits perfectly. The restaurant got its start inside a cozy, refurbished home. From the beginning, Chef Cole wanted to break the rules of traditional dining. He sought to combine the close, warm vibe of a Japanese sushi bar with bold, unexpected global ingredients.

Breaking the Sushi Rules

Traditional sushi is all about simplicity. Uchi, however, is famous for its non-traditional approach. Chef Cole—one of the few American-born chefs to win a James Beard Award for sushi—loves to surprise the palate.
At Uchi, a slice of fresh fish might be paired with fruit, chili, or cold-pressed oils. The restaurant’s most famous dish, Hama Chili, pairs delicate yellowtail sashimi with orange slices, Thai chili, and a splash of ponzu. It is a sweet, spicy, and savory bite that has been a fan favorite for over twenty years.

The Omakase Journey

While guests can order a la carte, the true Uchi experience comes from the Omakase. Omakase means “chef’s choice.”
When you trust the chef, a parade of hot and cold tastings lands at your table. One moment you might eat warm, melt-in-your-mouth Wagyu beef. The next, you are tasting sweet sea urchin or crispy tempura.
For people who do not eat meat, Uchi does not leave you out. They offer a full, multi-course vegetarian tasting menu that treats vegetables with the exact same care as expensive fish.

A National Expansion

Uchi’s parent group, Hai Hospitality, has carefully brought this unique vibe to major cities across the country. You can now find Uchi locations in:
  • Texas: Austin, Houston, and Dallas
  • The East Coast: Philadelphia, Washington, D.C., and Charlotte
  • The West Coast & Beyond: West Hollywood, Denver, Miami, and Scottsdale
Even though the brand has grown, each location keeps the original dream alive. The servers are trained to guide you through the menu like a helpful friend. The sushi chefs build your food right in front of your eyes.
